On our 'Sustainable Vancouver Tour,' we first meet Katherine Carol who takes us on a tour of Granville Island! This in-door, organic farmer's market is incredible! Then we find Chef David Hawksworth of West Restaurant who takes us with him on his quest for the freshest, sustainable seafood and produce at Granville Market. Afterwards we tool over to West Restaurant and meet Bryan Hopkins, restaurant manager. Bryan shows us around the restaurant while telling us the story of how it all came to be. Into the kitchen with David and the Hippy Gourmet as they roll out the pasta for the Spot Prawn Ravioli! Then a few short minutes later this ravioli is ready and we're digging in to this delightful appetizer! In between the recipes we take a break and visit Lucille Pacey at the Arts Umbrella program on Granville Island. Arts Umbrella brings art, dance, theatre and architecture classes to kids as young as six years old, and provides these services to inner city children who might otherwise never know about the value of art in shaping ones character. Back to West Restaurant and David Hawksworth, where David has a wonderful Ling Cod with local Manila Clams on the go! This is a mouthwatering preparation that he makes look so simple!
